Languages support - and subtitles

I love languages, and I'm trying to learn French, how's this relevant? When the PS3 is set to English and start the game I can choose weather I want subtitles or not -- perfectly fine, but when I set the system to French there are no subtitle options what so . . . What the heck? Also any other languages besides English & french supported on the PS3 version?

Playing the game using the different subtitles is something more interesting. As I have gathering that when you can install the PS3 and choosing the different language set now you can see your game in another language which you have set and start fun with this new language.
